Buffalo Chicken Casserole

Two of my all-time most popular recipes are: Slow Cooker Buffalo Chicken and Buffalo Chicken Dip. Clearly, you all are my people. This recipe literally just takes those and turns them into a whole casserole. Because who doesn’t love a casserole?

Seriously, once you make it, whoever tries it will be begging you to bring it again. This can be eaten as a meal or served as an appetizer (you can really use it as a dip for whatever you want) – the possibilities are endless!

Buffalo Chicken Casserole

Prep time: 5 minutes
Cook time: 35 minutes
Servings: 3

Ingredients:

  • 12 oz shredded chicken (rec: rotisserie chicken) 
  • 4 cup riced cauliflower 
  • 2 celery stalks, chopped 
  • 1/4 cup buffalo sauce (rec: Frank’s Buffalo)
  • 3 oz cream cheese 
  • 1/3 cup Greek yogurt 
  • 3 oz cheddar cheese (shredded, divided) 
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 red bell peppers (sliced)

Instructions:

  1. Preheat the oven to 350°F. 
  2. Combine chicken, riced cauliflower, celery, buffalo sauce, cream cheese, Greek yogurt, seasonings, and half of the cheese. 
  3. Add mixture to a baking dish and top with remaining cheese.
  4. Bake for about 35 minutes or until the cheese is melted and bubbling. 
  5. Chop the bell peppers into thick slices. Cover slices with buffalo casserole or use them for dipping!
