JK if you follow me on on the ‘gram you know that I’ve been having a serious tequila moment that I do not see slowing down anytime soon, but it’s this time of year that I really start craving a patio and a fruity drink.
But we know your typical fruity drinks are sugar bombs, metabolic disasters and summer bod killers (wow, buzzkill). So we don’t go there, do we?
We do have options, though, and those options don’t have to just include plain old vodka-soda with a lemon (although, that really is one of my all-time favorites because it’s hard for the bartender to screw up).
There are some good, skinny cocktail options + all the do’s and don’ts to drinking on NA’s No BS Guide to Drinking Alcohol but let’s give you some fun PARTY options. I am ready for backyard parties, aren’t you?
And the best part is, this skinny cocktail recipe is pumped with antioxidants and is super hydrating from the coconut water. That is a win-win when it comes to having some drinks – talk about a hangover killer.
Coconut water has electrolytes and when we drink, we lose electrolytes through…frequent urination. So keeping on top of those electrolytes will keep you from having to make up for it in the AM.
And I mean, I think antioxidants are good for you anytime you’re slowly poisoning yourself. Let’s just call drinking what it is, shall we? The vitamin C in the lemon will also help reduce oxidative stress on the liver – just trust me, that’s a good thing.
I’m not trying to tell you that you should have this Coconut Blueberry Cocktail for breakfast, because there IS still vodka in it, but I am saying it’s a swell choice for a drink when you want one.
Also, this is important. You do NOT need a cocktail shaker to make this. I couldn’t find mine when I was recipe testing (I lose everything), so I was using two pint glasses to just pour the contents of the drink back and forth instead of actually shaking it. And then I strained it with my hands bc I’m an animal. But u do u.

Slightly sweet, fruity, warm-weather cocktail that’s low on sugar and so refreshing. Bonus: lots of hangover killers built in.
Ingredients
1/4 c blueberries
1/3 c coconut water (I used Harmless Harvest)
2 oz vodka (I recommend Kettle One)
2 Tbsp lemon juice
3 Tbsp club soda
Instructions
Put blueberries into a shaker cup and mash really well with a muddler (or a spoon!).
Scoop ice into the shaker and then add coconut water, vodka and lemon juice.
Shake vigorously, and strain into a rocks glass over ice. Top with soda water.
Garnish with more blueberries and lemon slices.
Serving size: 1

Notes
As mentioned above, you don’t need a shaker set to make this cocktail. You can just use 2 pint glasses to dump the contents back and forth a few times, until you feel that it’s mixed up really well. Then, strain it with a fine mesh strainer…or your fingers if you’re down with that 🙂
