Beef Taco Pasta

Beef Taco Pasta

Prep time: 5 mins
Cook time: 15 minutes
Servings: 2

Ingredients:

  • 4 oz chickpea pasta (dry, uncooked) 
  • 6 oz extra-lean ground beef 
  • 1 red bell pepper (diced) 
  • 2 tsp taco seasoning 
  • 1/4 c water 
  • 2/3 c salsa 
  • 2 oz cheddar cheese (shredded)

Instructions:

  1. Cook pasta according to package directions. Drain and set aside.
  2. Meanwhile, heat a pan over medium-high heat. Add beef and bell pepper. Stir 8-10 minutes or until the beef is cooked through. Drain any excess fat. 
  3. Add taco seasoning and water, cooking until most of the water is gone. 
  4. Stir in the pasta and salsa and top with cheese before serving.
